Grown by Jonathan Gazca at the Zarza estate in Pitalito, Huila, Colombia at 1750 meters. Papayo is a rare Colombian varietal, and this lot gets a natural thermal-shock fermentation that pushes it somewhere truly exotic — flowers, melon, tropical fruit, candy sweetness, a cacao finish. Our most exclusive filter lot right now. Light roast from Blend Coffee Roasters, best enjoyed as V60 or Chemex.
