Decaf Isn't Caffeine-Free (and Getting the Caffeine Out Is Cleverer Than You Think)
The Joke Every Decaf Drinker Has Heard
You order a decaf and someone at the table grins: "what's the point?" It happens at our counter too, always with a laugh. But decaf might be the most misunderstood drink in coffee, and it hides two genuine surprises: it is not actually caffeine-free, and the way the caffeine gets out of the bean is a small feat of kitchen chemistry that most people have never stopped to imagine.
The Caffeine Leaves Before the Roast, Not After
Here is the first thing that surprises people: decaffeination happens to green coffee, the raw, pale seeds, long before any roasting. In arabica, caffeine makes up only around 1% of the bean's weight, and it is locked deep inside the cell structure. So the puzzle is delicate: pull out that one compound while leaving behind the sugars, acids and hundreds of aroma precursors that will become flavour in the roaster. Imagine removing the salt from a loaf of bread without touching anything else.
Soaked, Rinsed, Repeated
The elegant part is how it's done. In the Swiss Water Process, green beans soak in water that is already saturated with everything soluble in coffee except caffeine. Because the water is "full" of flavour compounds, only the caffeine migrates out, and carbon filters trap it. In sugarcane decaf, common in Colombia, a compound called ethyl acetate, found naturally in ripe fruit and derived there from sugarcane, gently bonds with the caffeine and carries it away. A third method uses pressurised CO2 to do the same job. Different routes, same goal: take one molecule, leave the rest.
"Decaf" Still Means a Little Caffeine
Second surprise: decaf is low-caffeine, not no-caffeine. European rules allow up to 0.1% caffeine in roasted decaf beans. In practice, researchers who measured real decaf servings found roughly 8.6 to 13.9 mg of caffeine in a 16-ounce cup, compared with well over 85 mg in the same size of regular coffee. That is a tenth or less, trivial for most of us, but worth knowing if you are pregnant or genuinely sensitive.
Why Decaf Got Its Bad Reputation
Caffeine itself is nearly flavourless, just faintly bitter, and it is only a small part of coffee's bitterness. Everything you actually taste lives in the other 99% of the bean. Old-school decaf tasted flat because roasters used tired beans and treated the process as an afterthought, not because removing caffeine ruins coffee. Start with good beans and a careful process, and decaf can taste like, well, coffee.
What This Means at Yugen

Every difference you taste between them, the florals, the chocolate, the fruit, comes from that other 99%, the part decaffeination works so hard to protect.
