The Foam on Top of Your Espresso Isn't Really Foam

The Moment Right Before You Drink It

You watch the espresso machine hiss, a shot pours into the cup, and on top there's this thick, reddish-golden layer that looks almost like it doesn't belong to coffee at all. Most people call it "foam" and move on. But that layer is doing something genuinely strange, and once you know what it is, you'll never look at an espresso the same way.

What Crema Actually Is

Crema isn't foam the way beer foam is foam. It's an emulsion — tiny bubbles of carbon dioxide gas trapped inside a film of coffee oils and dissolved solids, forced out of the ground coffee by roughly 9 bars of pressure, about nine times normal atmospheric pressure, pushing hot water through the puck in seconds. That CO2 was locked inside the beans during roasting, when intense heat breaks down sugars and starts what's called the Maillard reaction, producing gas as a byproduct. A freshly roasted bean is still "exhaling" that gas for days afterward, which is exactly why crema forms at all — you're watching trapped gas escape in real time, wrapped in a layer of oil.

Why It Disappears So Fast

Watch a shot for two or three minutes and the crema thins, then vanishes. That's the CO2 bubbles bursting and the oils spreading out across the surface — a race against time that starts the moment the shot hits the cup. It's also why crema is a terrible way to judge quality on its own. A stale bean with almost no CO2 left can still pull into something with a thin layer on top, and a spectacular, fresh bean can be under-extracted and taste hollow underneath a gorgeous cap of crema. Crema tells you about freshness and pressure, not really about flavor.

Grind Size Is Doing More Work Than You'd Guess

The finer the grind, the more resistance the water meets, and the more pressure builds as it forces its way through — part of why crema is thick on a well-dialed-in espresso and almost absent if the grind is too coarse. Too fine, though, and you choke the shot, pulling out bitter compounds instead of the sweetness that should be sitting underneath that foam.

How This Shows Up at Yugen

It's part of why we pull espresso only from our medium roast beans, never the light ones — a light roast holds onto more density and acidity that's built for pour-over, while a medium roast develops enough oil and structure at the surface to hold a proper crema and stand up to milk in a flat white or cortado. When you order a shot at the bar, that layer on top isn't decoration. It's roughly ten seconds of chemistry you can actually watch happen.

Next time you order an espresso, give it thirty seconds before you drink it — watch the crema shift color and thin out. You're watching the coffee finish "breathing."
