The Coffee Bloom: Why Fresh Grounds Fizz Before You Even Brew
Wait, Why Is My Coffee Bubbling?
Watch someone brew a V60 for the first time and you'll usually get the same reaction: they pour a splash of hot water over the grounds, the whole bed puffs up like rising bread, tiny bubbles crackle across the surface, and they ask, half-worried, "is that supposed to happen?" It is. That's called the bloom, and it happens because your coffee is, quite literally, exhaling.
The Bean Is Full of Trapped Gas
During roasting, beans undergo intense chemical change — sugars caramelize, the Maillard reaction browns and flavors the bean, and along the way, carbon dioxide (CO2) gets produced and trapped inside the bean's now-porous structure. A freshly roasted bean can hold several milligrams of CO2 per gram of coffee, sealed inside thousands of tiny cavities. Grind that bean and you expose all those cavities at once. Add hot water, and the trapped gas rushes to escape — that's your fizzing, puffing bloom.
Why It Fades as Coffee Ages
This is where it gets genuinely useful to know: that CO2 doesn't stay put. From the moment beans leave the roaster, they start slowly off-gassing — releasing CO2 through their surface, fastest in the first few days and tapering off over the following weeks. Research into the diffusion kinetics of CO2 in roasted coffee has shown that beans lose the bulk of their trapped gas within the first one to two weeks after roasting. That's also why coffee bags have that little one-way valve — to let gas escape without letting oxygen in. So a big, dramatic bloom is a good sign of a recent roast date; a flat, lifeless one is often a sign the beans have been sitting around for a while.
Why We Bloom On Purpose
Here's the practical payoff: if you skip the bloom and just pour straight through, that escaping gas pushes water away from the grounds unevenly, so some grounds barely get touched by water while others get soaked twice. That means uneven extraction — patches that are under-extracted and sour next to patches that are over-extracted and bitter, all in the same cup. Blooming first — a short pour of just enough water to wet the grounds, then a 30-45 second pause — lets most of that CO2 escape before the real brew begins, so the water that follows can extract evenly.
